Title: Cozyme - A Modular Biowaste Degrading Co-Culture System for Sustainable Bioproduction Description: Every time someone in Düsseldorf opens a cold beer, something is left behind that most people never think about, because brewing produces large amounts of brewer’s spent grain, which is mostly fed to livestock or ends up in landfills. With Cozyme, we want to turn this waste into something valuable. To do this, we are developing a co-culture of two yeast strains, in which one strain breaks down the cellulose in the spent grain into glucose, while the second strain uses this sugar to produce high-value compounds. Since the production strain can be exchanged without changing the rest of the system, we built it for different products that come from very different parts of metabolism: jasmonate, which can strengthen the natural defence of crops in agriculture, raspberry ketone, a flavour used in food and cosmetics, and 3-HP, a building block for the chemical industry that is still mostly made from fossil resources today. So that both strains stay in balance, we explored different ways of regulating the co-culture, including a sensor-based system that lets the cells control their own growth. Throughout the project, we talked with brewers, researchers and other stakeholders, whose input shaped how we designed Cozyme. In this way, we hope to show how synthetic biology can turn a local waste stream into a step towards a more circular bioeconomy. Wiki | Official Page
