Title: Eliminate acrylamide with dual-enzyme synergy Description: This video introduces our solution targeting acrylamide, which is a probable human carcinogen formed during high-temperature food processing. Current mitigation strategies are limited due to the poor thermal stability and non-recyclability of free enzymes. We engineered a dual-enzyme system using L-asparaginase and glucose oxidase, co-immobilized on genipin-crosslinked chitosan carriers. This design targets both precursors, asparagine and reducing sugars, to significantly reduce acrylamide formation before the Maillard reaction. The immobilized beads exhibit enhanced thermal stability and can be recovered and reused for multiple cycles, maintaining the food's original taste and texture. This project provides a scalable, clean-label, and cost-effective solution for safer food production across different manufacturers. Wiki | Official Page
