        <description>Title: Persephone: Preservation and Shelf-life Extension of fruits through PostHarvest Optimization by multi-eNgineered Enzymes Description: We plan to develop a fruit preservation enzyme preparation that features safety, environmental friendliness and high efficiency. The working principle of this preparation consists of two parts: one part delays fruit ripening by inhibiting the ethylene pathway, and the other part delays fruit spoilage by inhibiting mold growth. The main components of the enzyme preparation include chitinase, mannanase, ACC deaminase, SAM hydrolase and MnSOD. Among them, mannanase is a commercial product, while ACC deaminase, SAM hydrolase, MnSOD and chitinase are synthesized by engineered Escherichia coli. MnSOD can scavenge free radicals; ACC deaminase and SAM hydrolase can block ethylene synthesis, thereby reducing ethylene content and achieving the purpose of delaying fruit ripening. Chitinase and mannanase can act on the cell wall of molds, killing molds by destroying their structural integrity, and these molds are one of the causes of fruit spoilage.
