We developed an engineered enzyme system, ShellEvo, to enable green valorization of shell waste through efficient chitooligosaccharide production. By mining extreme-environment metagenomes, we discovered novel room-temperature chitosanases and further optimized their catalytic properties through rational protein engineering. Our strategy reduces energy consumption, improves product control, and provides a sustainable biotechnological route for converting shell waste into high-value bioactive chitooligosaccharides. Looking ahead, this platform could be expanded to diverse chitin-containing resources, promoting a more circular bioeconomy.
