Title: OiLipase — Preserving Rice Bran Oil by Inhibiting Lipase Description: Rice bran—the nutrient-rich byproduct of milling—degrades within days, its antioxidants and functional proteins lost to the very enzyme that drives its rancidity: lipase. We built OiLipase (from “Rice Oil” and “Lipase”), with two components named for Japan’s rice harvest festivals, Kannamesai and Niinamesai. KANNAME is a protease system that targets lipase only at the oil–water interface and shuts itself off on a built-in timer, sparing the rest of the bran. NIINAME is a cell-free biosensor that reads rancidity as fluorescence, run on hardware built from a disposable hand warmer, a 3D printer, and a single iPhone. Wiki | Official Page
