Our project brings together food, nature, and synthetic biology to develop an enhanced probiotic using engineered Lactobacillus. Inspired by Mother Nature, we harness the bitter gourd-derived peptide mcIRBP-19 and explore its potential to support glucose regulation through insulin receptor signalling. By combining genetic engineering with dry-lab modelling, our project lays the foundation for transforming an everyday food into a platform for enhanced metabolic health, while opening possibilities for more advanced glucose-regulating probiotics in the future.
