<description>Title: BrewXOS: A Solution for Transforming Brewer's Spent Grain into High-Value Prebiotics Description: Brewing generates approximately 38 million tonnes of brewer’s spent grain (BSG) annually, largely used as low-value animal feed. Converting its fibre into potential prebiotic ingredients could create greater economic value through functional food applications. However, complex fibre structures and separate enzyme-production steps complicate conversion. BrewXOS engineers Bacillus subtilis with three complementary enzymes to combine enzyme production and BSG conversion in one fermentation process, without adding purified enzymes. After 12 hours, our best strain achieved a control-adjusted sugar yield of 107.9 mg xylose equivalents per gram of dry BSG, with further evidence of oligosaccharide-like products. We also built a compact fermentation-monitoring prototype and incorporated stakeholder feedback into ingredient development. Future work will identify and recover the products, validate safety and prebiotic function, and evaluate food compatibility and production economics—advancing spent grain toward ingredients with nutritional and economic potential.
